A bright gin sour for the night you have lemons, honey, and a half-full bottle of gin. The working spec here is 2 oz gin, 1 oz fresh lemon juice, 1/2 oz honey syrup, shaken with ice and strained into a coupe with a lemon twist. 1
Honey syrup is the small pantry move that makes the drink behave: warm honey with water first, then it mixes smoothly into a cold shaker instead of clumping. 1 Beefeater's version uses nearly the same balance, at 50 ml gin, 25 ml lemon juice, and 15 ml honey syrup. 2

Swipe guide

  1. Start with the finished drink: pale gold, lemon-bright, and just sweet enough.
  2. Gather gin, lemon juice, honey syrup, a lemon twist, and ice.
  3. Shake the measured gin, lemon, honey syrup, and ice until very cold, about 30 seconds. 1
  4. Strain into a coupe, twist the lemon peel over the glass, and drink it cold.
