Ingredients
- 2¼ cups (280 g) all-purpose flour
- 1 tsp baking soda
- 1 tsp fine salt
- 1 cup (225 g) unsalted butter, softened
- ¾ cup (150 g) granulated sugar
- ¾ cup (165 g) packed brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups (340 g) semi-sweet chocolate chips
Steps
- Preheat oven to 375°F / 190°C — 5 min
- Whisk flour + baking soda + salt — 2 min
- Cream butter + both sugars until light and fluffy — 3 min
- Beat in eggs one at a time + vanilla extract — 2 min
- Fold dry ingredients into wet — stop when flour streaks disappear — 2 min
- Stir in chocolate chips — 1 min
- Optional: chill dough 30 min
- Scoop tablespoon-sized balls onto parchment-lined tray, 2 inches apart
- Bake 10–12 min — edges golden, centers still soft
- Cool on pan 5 min, then transfer to wire rack
Tricky Technique
The Fold — once dry ingredients meet wet, fold with a spatula using an under-and-over motion. Stop the moment flour streaks vanish. Over-mixing develops gluten → tough, cakey cookies. Under-mixing (a few streaks left) is forgivable; over-mixing is not.
