Raw milk is having a moment. Here's what the 2026 outbreaks actually show.

Raw milk is having a moment. Here's what the 2026 outbreaks actually show.

A nationwide recall of Graziers raw-milk cheese, a 100-plus-person Campylobacter outbreak in Idaho and a March E. coli outbreak all landed on the same kind of product; here is what the evidence says about raw milk's health claims and what to do if it is in your fridge.

Somewhere along the way, raw milk picked up a wellness story: the version with the nutrients left in, the "good bacteria" your gut is missing, the gentler option if dairy usually bothers you. It is a persuasive story, and it survives right up until you read the outbreak record.
On September 24, the FDA called Sierra Nevada Cheese Company to tell the firm its cheese was in an outbreak. The company recalled every one of its Graziers grass-fed raw milk cheeses that day — medium cheddar, sharp cheddar, jalapeño jack and Monterey jack — sold as 8-ounce and 16-ounce blocks in stores and as 5-pound loaves to restaurants and wholesalers, nationwide and online. 1
The CDC's count, published the next day: 13 people sick, 8 hospitalised, 3 with a kidney complication called hemolytic uremic syndrome, across nine states, with the most recent illness starting August 26. 2 More than half of the sick people are children aged 5 and under. 2 Of the nine people investigators interviewed, all nine had eaten the Graziers cheese. 1
That is one of three raw-dairy outbreaks this year. In March, an E. coli outbreak traced to Raw Farm raw cheddar cheese and raw milk closed at 9 cases, 3 hospitalisations and 1 case of HUS, and over half of those sick were under 5. 3 In Idaho, officials have been investigating a Campylobacter outbreak since May that they tie to three raw-milk operations — Paradise Grove in Jefferson County, Lolita Farms in Kootenai County and Evans Farmstead in Twin Falls County. More than 100 people got sick and 11 were hospitalised. 45
Different germs, different states, the same ingredient: milk or cheese that skipped the heat step.

What that heat step actually buys you

Pasteurisation heats milk to a set temperature for a set time, which kills the bacteria that cause illness. It is the reason milk stopped carrying tuberculosis, diphtheria, Q fever and brucellosis. 6
Raw milk can carry Campylobacter, Cryptosporidium, E. coli, Listeria, Brucella and Salmonella, and it can look, smell and taste completely normal while it does. 7 The CDC's own wording on farm hygiene is that good practices reduce contamination without guaranteeing safety. 7
The record behind that warning is large:
  • Between 1998 and 2018, health agencies linked 202 outbreaks to raw milk, causing 2,645 illnesses and 228 hospitalisations. 6
  • Between 2013 and 2018, 75 of those outbreaks caused 675 illnesses, and 48% of the people sickened were aged 19 or younger. 8
  • A CDC journal modelling study put unpasteurised dairy at roughly 840 times more illnesses and 45 times more hospitalisations than pasteurised dairy, per serving. 9
  • States that allow raw milk sales recorded about 3.2 times as many outbreaks as states that prohibit them. 8
  • The group doing the drinking is small: in that modelling study, unpasteurised milk was consumed by about 3% of Americans and unpasteurised cheese by under 2%, and together they accounted for 96% of the illnesses traced to contaminated dairy. 9
Few people, most of the damage. Most servings of raw milk pass without incident, and the ones that go wrong can put you in hospital — at per-serving odds roughly 840 times the pasteurised version. 9

The selling points, checked one at a time

The claimWhat the evidence showsWhat it means for you
Raw milk keeps nutrients that heat destroysProtein, fat, carbohydrate, minerals and vitamins come through pasteurisation essentially unchanged. 10The nutrition is the same on both sides of the heat step.
It is easier on lactose intolerance and milk allergyRaw and pasteurised milk hold about the same lactose and the same milk proteins, raw milk contains no lactase, and pasteurisation does not create either problem. 10If dairy upsets you, the raw version upsets you the same way.
The bacteria in it work like a probioticThe bacteria in raw milk come from udder tissue, manure, soil, water and milking equipment, and they travel alongside the pathogens. 10A bottle of raw milk carries an unpredictable mix of bacteria.
Less processed means healthierPasteurisation is a safety step in the same family as cooking chicken, and the milk's nutrition comes through it unchanged. 6Treat raw milk as a raw animal product, which is exactly what it is.
H5N1 in dairy herds is a separate worryH5N1 has been detected in U.S. dairy cattle, and the CDC advises against drinking raw milk contaminated with live virus. 7The heat step is the thing that removes this from the equation.

Check what is in your fridge

The recalled cheese is Graziers raw milk cheese from Sierra Nevada Cheese Company — the medium cheddar, sharp cheddar, jalapeño jack and Monterey jack, in 8-ounce and 16-ounce retail packages and 5-pound wholesale loaves. It went out nationwide and online. 1
  • These have a long shelf life, so a block at the back of the fridge still counts. 1
  • Throw it out or take it back to the shop for a refund. 1
  • If you froze or refrigerated cheese without the packaging and cannot tell whether it is part of the recall, throw it out. 1
  • Wash and sanitise anything it touched — boards, knives, containers, the shelf it sat on. 2
  • Make the label a habit: the word "pasteurized" on the package tells you the milk or cheese went through the heat step. When the word is missing, ask, and ask twice at farmers' markets and roadside stands. 6

If you already ate it

Shiga toxin-producing E. coli usually shows up 3 to 4 days after you swallow it, sometimes as late as 9 days, as severe stomach cramps, diarrhea that is often bloody, and vomiting. Most people recover in 5 to 7 days without treatment. 11 Campylobacter runs a slightly different clock: symptoms arrive 2 to 5 days after exposure and last about a week, and complications can include a bloodstream infection, reactive arthritis, irritable bowel syndrome and Guillain-Barré syndrome. 5
Fluids are the treatment. Drink more than you think you need, in small sips. 11
Two things to leave on the shelf. Anti-diarrheal medicine can make a bacterial illness last longer, and with a Shiga toxin-producing E. coli infection it raises the chance of HUS. 11 The CDC's line is blunt: call a provider before taking one, and skip it entirely if there is bloody diarrhea or a high fever. 11 Antibiotics carry the same warning: with this germ they raise the risk of HUS. 11
Get seen the same day if you have diarrhea with a fever above 102°F, diarrhea that is still going after two days, bloody diarrhea, vomiting so heavy you cannot keep liquids down, or signs of dehydration such as barely peeing, a dry mouth and throat, or dizziness when you stand up. 2

Signs that mean the emergency room

A small share of E. coli infections turn into hemolytic uremic syndrome, and HUS is a medical emergency that needs hospital care. The signs to watch for in someone who has diarrhea: 12
  • Peeing much less often, or not at all
  • Losing the pink colour in the cheeks and inside the lower eyelids
  • Unexplained bruising or tiny red spots on the skin
  • Blood in the urine
  • Unusual tiredness or irritability
  • Decreased alertness
Call a doctor or go to the emergency room immediately if you see any of them. 12 HUS is most common in children under 5, which is why the age pattern in these outbreaks matters. 12

The short version

The recalled cheese is Graziers raw milk cheese — medium cheddar, sharp cheddar, jalapeño jack, Monterey jack. Bin it or return it, and wash what it touched. Pasteurised is the version with the heat step, and it is also the version with the same nutrition. If you get sick, drink, and leave the anti-diarrheal on the shelf until you have talked to someone. Bloody diarrhea, a fever over 102°F, or a day with almost no pee is a same-day problem. HUS signs — no pee, colour draining from the face, bruising that came from nowhere — are an emergency-room problem.
Raw milk is a raw animal product with a marketing budget. That is the whole gap between the pitch and the record.
