Imagine a potato course that refuses to behave. A warm potato sphere hangs above a cool potato sauce. The ingredients are familiar, but the temperature is split in two, so your mouth has to solve the dish while you are eating it. That is "Hot Potato, Cold Potato," one of the dishes Grant Achatz has described as a signature of Alinea's early imagination.
