Ingredients

  • 2ÂŒ cups (280 g) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp fine salt
  • 1 cup (225 g) unsalted butter, softened
  • Ÿ cup (150 g) granulated sugar
  • Ÿ cup (165 g) packed brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups (340 g) semi-sweet chocolate chips

Steps

  1. Preheat oven to 375°F / 190°C — 5 min
  2. Whisk flour + baking soda + salt — 2 min
  3. Cream butter + both sugars until light and fluffy — 3 min
  4. Beat in eggs one at a time + vanilla extract — 2 min
  5. Fold dry ingredients into wet — stop when flour streaks disappear — 2 min
  6. Stir in chocolate chips — 1 min
  7. Optional: chill dough 30 min
  8. Scoop tablespoon-sized balls onto parchment-lined tray, 2 inches apart
  9. Bake 10–12 min — edges golden, centers still soft
  10. Cool on pan 5 min, then transfer to wire rack

Tricky Technique

The Fold — once dry ingredients meet wet, fold with a spatula using an under-and-over motion. Stop the moment flour streaks vanish. Over-mixing develops gluten → tough, cakey cookies. Under-mixing (a few streaks left) is forgivable; over-mixing is not.
