  • 2 oz white rum
  • 1 oz fresh lime juice (about 1 large lime)
  • ½ oz simple syrup (or ½ tsp sugar dissolved in warm water)
Equipment: cocktail shaker, jigger, strainer, coupe glass.
No special bar items. No specialty liqueurs. Just your fridge and your pantry.

Image 3 — Mix It Squeeze your limes fresh — bottled lime juice has a flat, slightly bitter edge that shows through in a drink this simple. Add all three ingredients to your shaker with a generous handful of ice.
Pantry hack: no simple syrup? Dissolve half a teaspoon of white sugar in a splash of warm water. Stir, done.

Image 4 — Shake & Strain Shake hard for a full 15 seconds. You want the shaker to frost over and feel almost painfully cold — that's how you know the drink is properly chilled and diluted. Strain into a coupe glass you've had in the freezer (or rinsed with cold water). No ice in the glass; serve straight up.
